Use daggerboard with front foot. Take time to stabilise (but then board goes upwind), or do early and then you're not stable yet - your choice. Will be easier with any modern board with shorter booms.

Freestyle windsurfing - back-to-back tacking. Simply sail back to the sail, go upwind, end up sailing on the other tack, facing the wind. Simple.
